Chicken 65 is the plate that disappears first. Boneless chicken is marinated in ginger, garlic and red chilli, fried until the coating shatters, then tossed straight through a hot masala of curry leaf, green chilli and a squeeze of lemon.
Chicken 65 lives or dies on timing. The chicken goes into the fryer only once the order is in, comes out with a coating that actually cracks, and then spends seconds — not minutes — in the wok with the masala. Any longer and the crust softens; done right, every piece stays crisp under the sauce.
Ours is marinated in ginger-garlic, red chilli and a little yoghurt before it is battered, so the heat runs through the meat rather than sitting on the surface. The finishing toss brings in curry leaves, slit green chillies and lemon. If you are ordering for a group off our menu, this is the plate to start with.
Nothing is pre-fried and held. Each portion is battered, fried and tossed when it is called, which is why it leaves the kitchen in about fifteen minutes and still crunches. On takeout orders we vent the box so the steam does not undo the crust.
It is a dry starter, so it pairs naturally with something saucy: Dal Makhani or Butter Chicken with naan makes a complete table. Sliced onion, lemon and a cold mango lassi to take the edge off the chilli.
