About Our Chicken Biryani

Biryani lives or dies on the rice. Ours is aged long-grain basmati, boiled only to seventy per cent and drained, so the final dum finishes it exactly at the point where every grain stays separate. Anything cooked all the way through before layering turns to pilaf, and that is the most common mistake in a rushed biryani.

The chicken is marinated in yoghurt, browned onion, whole garam masala, mint and coriander before it ever meets the rice, so the flavour rises through the pot as it steams rather than being stirred in afterwards. It arrives with raita and a mixed salad, and it is comfortably the biggest single portion on our menu.

Layered and Sealed the Dum Way

Dum simply means the pot is sealed and left alone over low heat. No steam escapes, so the rice absorbs the chicken, saffron and whole spice aroma instead of losing it to the kitchen. It is a slower method than a fried rice, and it is the reason biryani takes a few minutes longer to reach your table.

What to Order Alongside Biryani

Raita comes with it as standard — the yoghurt is there to cool and to loosen the rice. Many guests add a gravy dish to spoon over the top; Butter Chicken or Dal Makhani both work well. Add Chicken 65 if you are feeding a crowd.
